First speeding ticket

I got clocked doing 70 in a 50 today and received a ticket for 52$. The cop told me it would be 3 demerits and a higher charge but he cut me a break.

My question is do I just plead guilty and pay? What does that do to my insurance?

My partner thinks I should dispute it but the officer said the demerit points can be back on the table if I go to the courts. This is my first ticket ever so I wanted to ask for some advice.
