Looking for some "knockout" suggestions

My partner and I are looking for ways to incorporate anesthetic into scenes. We looked into chloroform first, due to its use in popular culture, but it's a little more medically dangerous than we're comfortable with, is there a safer, preferably cheap or able to be homemade alternative to use in knocking me out for a short length of time. This wouldn't be a frequent thing, so I'm not too worried about long term effects, but it's definitely something that we'd like to explore. Any advice/ suggestions are welcome!
