Changing bars and stem

I want to change the bars and stem on my Specialized Myka FSR Comp 2010, size M. The current bars are 640mm and the stem is 110m. I considered putting 720-240mm bars. What would be a good stem length? Here's a picture of the bike and the bars/stem now: https://imgur.com/a/hTJ0BXt
