Need help with armor stats

Hey guys, I'm not sure if it gets explained anywhere, I couldn't find anything. So my problem is that I don't understand the difference between the base defense stat and the element stats. Like, why would I use armor that has 5 defense less just to get a +2 in water or fire? Can someone explain this to me please?
