How far does self defense go in the law?

This is random so excuse how weirdly it may be written. Some times my mind wanders and when I come across scenarios that I can’t picture a realistic end to it really bothers me. Say you’re in a situation where your life is in danger but you have a gun and training, will you go to jail for taking a head shot instead of attempting to take a body shot?
