Evos and fittings

Haven’t added any fittings or evos yet, as didn’t want to waste by doing so incorrectly. Am I right in thinking best logic is to evo all clubs before fitting to not waste fittings? Or better still use primarily gold clubs, and fit and evo whenever, as fittings will stay regardless of evo?
