Evos and fittings

Haven’t applied any Evos or fittings yet, an didn’t want to waste doing so incorrectly. Am I right in thinking it’d most logical to evo club all the way before applying fittings? Or better still use primarily gold clubs and evo or fit whenever, as fittings won’t be lost regardless? Thanks
