Any games that are very replayable?

Pretty much every game I've bought sits in my library collection dust because I can't bring myself to replay them. I usually get 100 percent, maybe do a new game plus but then I'm done. I can't replay a game if I know all the story elements, plot twists and encounters. The only games I've replayed multiple times are Hades, a few Call of Duty titles, and pretty much any game with a campaign under 10 hours. I've recently started Baldurs Gate 3 and assume I'll replay it eventually. Are there any games with mostly random elements that make the game replayable?
