Ideas to avoid the 2 week phase.

So, like a lot of you here, I've been wanting to start a new hardcore world and just play on it for a long time. With ideas, projects, farms etc. Basically what I struggle with is playing Minecraft for a while because I run short of goals and objectives. So I'm asking you guys for a long term goal that I can keep and play on this world with something in mind to do. Mind you, I'm not builder or redstoner, so I wanna learn and expand everything I know about this game. I've been playing for 10 years and I mostly just get netherite and beacons and like stop there.

Any help would be appreciated! I'll also build a sign with the username of the player who gives me good ideas/builds/ to be inspired from!
