Being taught hill starts using handbrake in a car that has hill assist?

Hi everyone. I’m 6 hours into my lessons and have done a fair few hill starts (mainly in traffic) However in my last lesson, I stalled the car because using the handbrake with the hill assist was throwing me off. Is it normal to be taught this way? Thanks
