Seeking advice on hardscape light installation!

Just had my outdoor kitchen frame installed with cement board and steel studs. Planning to add lights before granite countertops go in. Cement board top is already installed (see photo). What's the best approach?

1. Remove cement board top, install light, and reattach?

2. Install on top of cement board (simplest option)?

3. Use an angle grinder to recess light into cement board for a flush install?

Any feedback or experiences with similar installations would be greatly appreciated!
