First time dating after almost 3 years

"So I met this beautiful and sweet woman (I'm F23 and she's F22). We only met for 2 months while she was on vacation here in Spain, but she has already left. I know I'm not ready for a long-distance relationship, and I understand that she isn't either. However, I already miss her smile, her laugh, and the way she interacts with and treats others. Even though we only just met, I felt that she is a truly genuine person. Now I find myself wondering what to do with this feeling, although I understand that the distance likely makes any further development difficult. Should I delete her number? She clearly explained that she doesn't want a long-distance relationship, and I don't want to force it. These two months were great. Basically a two-month stand?
