Sugar water or pollen patty

Hello! I am in Northern California I have done beekeeping before but after I lost my hive I took a break so it’s been a while. I am installing a new hive next weekend. Should I make sugar water and have that for the hive or buy a couple pollen patties? Should I do both? Last time I was beekeeping I always had such a hard time with making sugar water. What is a recipe that worked well for you that I could try? Thank you!! Sorry for so many questions it’s just been a while
