Apply by E-mail or Post? (UK-Postgrad application)

Afternoon,

I'm asking whether I should apply via post or email because of the recommendation letters.

It is stated that applications and enquiries should be emailed, however the sample recommendation letter they gave says to be physical. Also if I choose email how do I get my referee to email a recommendation letter to them and they know its mine?
