Help me building a monk

So i'm gonna play descent in to avernus. And i'm planning to play as a monk and want to try the grappling then manacles/chain/rope playstyle.

Should i go pure monk or start with fighter/rogue/ranger?

And what subclasses should i choose? Currently im interested on mercy because there's no healer on the team
