Cassava & Coconut Cupcakes (GF) – Taste of Guadeloupe
Hi everyone!
I'm Marilyne, posting from Guadeloupe 🇬🇵.
These mini cupcakes are made with cassava (yuca) flour and fresh coconut, so they’re naturally *100 % gluten-free*.
They’re super-moist and finished with a light lime-syrup glaze.
◆ Ingredients (makes 8 cupcakes)
• 7 Tbsp cassava flour
• 3 eggs
• 6–7 Tbsp homemade coconut milk
• 3 Tbsp brown sugar
• 3 Tbsp freshly grated coconut
• 1 Tbsp coconut oil
• 1 tsp cinnamon
• 1 tsp vanilla extract
• Zest of 1 lime
• Juice of ½ small lime
• Pinch of salt
◆ Steps
-
Whisk eggs, sugar, coconut milk, coconut oil, vanilla, cinnamon, lime zest & juice, salt.
-
Fold in grated coconut, then cassava flour → smooth, spoonable batter.
-
Fill muffin cups ⅔ full and bake 30 min at 180 °C / 355 °F.
-
While baking, simmer equal parts water + sugar + lime juice to make a thin syrup.
-
Brush cupcakes with hot syrup as soon as they come out of the oven.
**Why I love them**
✔ Naturally gluten-free (cassava flour, no wheat)
✔ Tropical coconut-lime flavour
✔ Soft, tender crumb
If you’d like to see the whole process *plus* a short visit to our local cassava mill (kassaverie) here in Guadeloupe, here’s the 9-minute video:
