Low/mid power build suggestions

Build Help

I'm considering building a pc for a family member that's been going without a good computer for too long. To my knowledge, they wouldn't need it for anything particularly intensive, just basic browsing, streaming, and word/image programs. At the same time, it doesn't need to suck for the sake of small savings on the total. Do have a microcenter reachably near me if the trip can be justified.

I already have a screen and basic keyboard/mouse I'd be putting into it. I also have a 1060 that probably works, but leaning towards the view that something a slightly newer might still be called for as a matter of longevity and/or performance, but would be interested in thoughts there. So the only expenses I would still have would be the case, PSU, motherboard, CPU, and GPU (if the 1060 does call for upgrading). I'm 100% fine spending anything around ~$750, if it's called for, but would hope that would be over-budgeting for their use case.

I'm aware of the pcpartspicker lists and am going through that, but was just interested in any advice or other resources people might have given how much of what I'm familiar with is geared towards the needs of high performance/gaming users.

Would ideally be looking to be doing this very soon, before the full force of what our electorate has wrought hits parts prices, so working off of current pricing not waiting for sales would be the plan.
