Does the type of work you do matter?

Application Process

Sorry if this has been asked before, I've searched but haven't seen this exact question. Does the type of work you do post-grad matter?

I have a 3.9high GPA and have been scoring around 17mid on practice LSATs (haven't taken a real one yet so grain of salt). Right now I have tier 3-ish softs (lots of research experience/published academic and some others). I want to get my best shot at scholarships so I'm planning on taking 2 years off to get work experience on my resume.

However I'm having a really difficult time finding a job since all of my internships have been research/politics based and not in the legal field. This is all a very convoluted way of explaining that as of right now I'm going to be a server over the summer lol. So have you guys found that your role itself was influential in admissions, or just having the work experience made a difference?
