Madrid: Great paella near Plaza Mayor/Puerta del sol/Gran Via

I am in Madrid at the moment. I would like to try a great paella while I’m here and not visit a tourist trap. We live chicken and shrimp but probably don’t want to eat a paella with lobster, cuddle fish, mussels so if it’s a seafood hesvy restaurant it might not work.

Any recommendations will be greatly appreciated. I can definitely can it if it’s on the other end of the city but would prefer it on the southern half of city center.
