good japanese izakayas/bars?

I moved from Japan to HK 6 months ago and the fact that I still haven’t found a place that sells GOOD HIGHBALLS is diabolical.

Please recommend any bars/izakayas/restaurants that actually have authentic highballs (and non-diluted ones)!! thank you so much!
