Leather conditioning vs cleaning vs coating

So I'm a bit lost on the three. I have two things I'd like to fix up: Leather seats in my 2004 convertible mustang, and a leather seat on my 1997 motorcycle.

From what I understand, I don't need to condition the leather seats on my mustang if they're not cracking or anything; just clean and coat them to protect against spills and uv?

For my motorcycle seat, however, there is noticeable cracks, so i have to clean it, condition it, and then apply coating too, correct?

Im planning on using gyoen products for all 3.

Also, can I use these same leather products on my leather jackets and stuff? Or are the chemicals too harsh for clothing?
