Best time to go in the fall?

Thinking of planning a trip to Epic- any time between mid Sep - Dec. Anyone have recs on what month to go for good weather (don't want to fry in sun) and fewer crowds?

I'm from San Francisco and I've only done Disneyland. May tie in other recommended parks too!
