How do you do builds?

I'm pretty tired of how I do builds. In the newer games the way I play isn't very fun. So I'm here seeking inspiration. How do you do your builds, what decisions do you make and how do you figure out what's fun and not. I really don't like elden ring but I wanna at least have a complete opinion before I stop playing it all together.

Note this is only about how the game is played with builds and build balancing. This is not about tge flaws I have with the game. It's about helping me enjoy the game more and look past said flaws
