What’s the testing process like for new medical equipment and procedures?

I'm thinking of writing a story where one of the main characters is part of a test trial for a cryopod (for those who may not know, a cryopod is a fictional device that allows people to sleep/hibernate for long periods without aging). I was wondering how they would go about testing something like this.
