Would two stage or variable make sense in my situation?

Trying to make a decision on a quote sooner or later due to it getting warm outside.

I just bought a 1 1/2 level 1700sqft 1940s house that I knew had a broken AC upon closing so I do not know how well it cooled beforehand. It was actually leaking into a spare bedroom on the floor below so I never even tried it.

I got three quotes from three different vendors, but honestly was much more impressed with the third company not only prices, but they seemed generally nice and willing to educate me on the process which I always appreciate. Even if their pricing wasn’t better, I may have still gone with them.

They gave me a quote for single stage, two stage, and variable (Carrier Comfort, Performance, Infinity).

I understand the basics of the three levels, but not entirely sure I know what would be best in my house or in my situation. I tend to keep my house on the warmer side, both summer and winter. I’m pretty content with the house at 77° with no AC now but it’s going to be warming up and the humidity in the house tends to get above 60% already.

The three quotes:

Comfort 14 seer, 1 stage - 10 year parts, 5 year labor - $8,195

Performance 18 seer, 2 stage - 10 year parts, 5 year labor - $11,195

Infinity 26 seer, variable - 10 year parts and 10 year labor - $13,095 but will have a $1,200 instant rebate to bring it back down to $11,895

So my question is, with the rebate helping bring the infinity down to nearly the two stage price, do I just bite the bullet and go with infinity? If the cost of the two stage was somewhere more in the middle of 1 stage and variable, I think 2 stage would make most sense in my situation. I don’t run AC all that much so spending $12k on AC seems like overkill. But I think I’m most interested in the humidity control of 2 stage and variable than anything.

Also, I live in Ohio. Summers can be humid but the hot weather typically gets somewhere between 90-100 occasionally for one to two months a year, but we mostly hang around 75-90.
