Low carb dinners

I was diagnosed with GD after taking my blood sugar numbers for 2 weeks. My post-meal numbers are all within range. My fasting numbers are slightly high…usually like 104. I have been trying to eat carbs as recommended with my dinner (45-60g). My friend who has diabetes was told differently and was told to not eat carbs with dinner as it’s harder for your body to process them when you aren’t active at night. So I tried eating a couple low carb dinners with just meat and veggies. Both times I tried my fasting numbers the next day were within range. My OB wants to put me on insulin. I’m also slightly annoyed at them bc they didn’t seem to listen to me when I told them I have yet to actually meet with a doctor to answer my questions or meet with a nutritionist which they originally told me would be the next step. They just told me to go straight to going on insulin. I asked the nurse over the phone if low carb dinners were an option. She asked “what hat did your nutritionist say?” I had just told her earlier that day I haven’t seen a doctor yet or been referred to one! I called a different OB to get a second opinion. The nurse on the phone there said “of course your fasting numbers are high eating carbs at dinner!!” So now I have follow up appointments at 2 different OBs for next week. But wanted to know if anyone has experienced this and was able to eat low carbs for dinner? It seems to work with me and Id really like to avoid taking insulin especially knowing my OB isn’t really listening to me.
