NPCs Despawning in Combat?

I am am trying to complete The Grand Tree at level 40, where I was attempting to safe spot the demon using my range at lvl 27. I make slow progress, however the demon keeps despawning after a time, despite still being actively engaged in combat. Is this a new system, what are the parameters around an npc despawning?
