Why are they so annoying (First Playthrough)

So I I finally beat Radahn and go to Nekron. I find the gargoyle boss and when I get him to half hp he summons his bro and they start clapping me. I got no time heal cause every time I either get jumped on or get snipped whith poison and if I even think about hitting them, they just fly away. ( I was able to beat but I still think they really annoying).

On an unrelated note, how do I summon spirit ashes? I still dont understand lol
