PC building guidance needed please

I own an i7 14700k CPU and was wondering if its okay if i use a Thermalright Peerless Assassin 120 (PA120 SE) to use. I do plan to use this pc for a long period of gaming and recording/editing (if not sufficient, recommend me an air CPU cooler if possible)

Additionally, for storage, I plan on using two 1 TB NVMe Gen 4 drives. One for booting and basic apps, while the other is strictly for downloading games. The NVMe for boot/windows 11 would be WD Blue SN580, and the other is Crucial T500 2TB. (Please inform me whether this is a good or bad choice and what I should do instead)

Lastly, is a PSU of 750 watts enough for an i7 14700k + rtx 5070?
