Have I Messed Up My Platinum?

I think this question has been rinsed and repeated throughout the years, but here goes.

I've been a fan since attempting this Platinum on PS3 12 years ago, but I never attempted the Platinum because of the stupid online trophies - which also carried over into the Remastered onto PS4. I finally got the PS5 version and have managed to play the whole game, missing only two items.

1: The first shiv door you come across in Bill's Town: The Woods (I didn't have the materials to craft a shiv).

2: Joke #4 (In the Hotel Lobby, the one that has notoriously glitched out for people). I couldn't get it to trigger and for both of these items I thought: "eh, what the Hell, I'll grab them once I can access chapter select and use infinite crafting for the shiv etc."

Soooo...I finished the game, for the millionth time, and I'm just now finding out that even with chapter select, it creates a new game save every. single. time. SO...when my final shiv door didn't trigger in the trophies, I was confused and went back to my menu, only to be met with the new game with no progress (after Bill's Town ofc).

I thought....uh, fine, if I'm gonna replay it again I may as well do a higher difficulty (not grounded ofc, bc I can't use infinite crafting). HOWEVER, does this mean I'm going to have to play all the way through and collect every single item again in each chapter to "complete" the one I'm missing. For example: I missed the shiv door in Bill's Town, so am I going to have to replay the WHOLE GAME again, ensuring I collect every single shiv door until the end of the game? Or, with Ellie's jokes, am I going to have to make sure I collect every single joke up until the end of the game, even though I'm only missing the one in the Hotel Lobby? (Also, is it possible to make a save before that trigger and reload if it glitches again? OR, does anyone have any tips for this stupid glitch?)

I know this has been overdone, but I'm Googling, and Reddit'ing outta my mind and finding no specific answers to this particular question. Can anyone help? These are the only collectables missing. Well, those two and I just have to upgrade a bat...but that's a no-brainer. (No pun intended.... Too;)).
