What features do I need in a motherboard?

The most common motherboard advice I see is "Buy only what is sufficient for your needs" and I have no idea what I need

My new PC is going to be primarily for gaming, and all I know is that it's going to have to be on the AM5 chip set

• 2 x 16 DDR5-6000 CL30
• A 2tb M.2 SSD with PCIE 4.0 x4 or 5.0 x2
• 7800x3d or 9800x3d
• Probably a Phantom Spirit or something
• Either a 5070ti or 9070xt with 850w or 1000w psu

I want to know which motherboards reach a peak of gaming performance before they start adding features that I wouldn't use and increase the price for no reason

Where I get lost is:

• What quality VRM I need for power delivery
• What ports I need
• Number of M.2 slots and their qualities (5.0 / 4.0)
• What heat sinks I need
• PCIE slots needed for GPU
• What has the possibility of overclocking
• Future proofing upgrades
