Matthew 15:1-9

I was raised Protestant but have been feeling the call to the Catholic Church recently. I'm seriously considering converting, but I was wondering how the Church rationalises Matthew 15:1-9, specifically the verse that calls out "teaching as doctrines the commandments of men". Is this not what the Catholic Church is doing a lot of the time, and if not, what am I misunderstanding? I know that the Catholic Church is based firmly in Scripture, but I don't fully know how I feel about Church doctrines/tradition being infallible / etc. On the other hand, it was the Church that compiled the Scriptures, so there clearly is God-given authority there.
