Oyster sauce, fish sauce, shaoxing wine etc.

The majority of recipes have these ingredients in them.

Is this what's used in the villages in China and was it used say 100 years ago?

I would love to cook traditional Chinese food from different regions but want to avoid artificial ingredients.
