Bike Recommendation for Exercise

I'm really just looking for pedal assist to help me ride more. My plan is to have it on the lowest assist setting or not on at all for most of my riding. No real hills. Just want to extend how long I ride when I get tired. I haven't ridden a bike in forever and want to for my health. So I can't imagine I need a commuter type ebike or one that has a lot of features. Any recommendations?
