I oddly feel some relief at the thought of avoiding shopping for bread or pasta

I was one of those college kids that lived on beef jerky, eggs, milk, and candy. Never really liked bread. Always loved fruit and veggies. I'm also really skinny though and wanted to gain weight for the gym. I forced myself to eat more bread and pasa to get more carbs and calories in. Got sick (from something else) and stopped eating gluten and most carbs/grains for a week and oddly didn't feel fatigue for once despite being sick. Ate a morning cake on the 8th day and the fatigue hit me like a bag of bricks. I don't know if I'm celiac (getting tested) but that was a surprise. Even if I'm not, I'm going "phew now I can go back to how I used to eat." Just more fruits and real meats and no candy nowadays. I think I felt some weird fomo from not eating like how the rest of the world apparently eats.

I also strangely feel relief when I shop for gf pasta and see like 4 options instead of an entire aisle. Not as much paradox of choice perhaos? I don't feel as overwhelmed.
