New Bar in Texas- Staff wages, tip handling

Hi, this is my first time into bar business. What are typical wages for various roles from bartenders, bar manager, server etc ? How do we handle tips- in terms of paying daily in cash vs paycheck and sharing with kitchen/bar-back etc? Truly appreciate any inputs.
