Beginner friendly version of WoW

Hello, I’m quite experienced player who enjoys the vanilla > tbc > wotlk so I naturally play anniversary now. My gf who basically never played any PC game is interested to play with me and I’m not sure what’s the best. Should I just play classic with her since its the version I enjoy the most? Anniversary or era? Hardcore? MoP? Retail? Help me out gamers! Or gamer girlfriends :)
