Would you feel comfortable buying/eating these cookies? Critique my process please:
Hi all,
I bake cookies and sell at a local farmers' market. All of my cookies are vegan, however I'm asked at least 3 times a market whether I have GF options. I've always answered that it's in the works, I want to do it right, I'm trying my hardest to make sure I won't accidentally "gluten" someone - but I process 20kg of flour every time I bake.
Tonight I'm finally making the GF attempt - here's what I'm doing:
* NO gluten is processed in the kitchen at the same time I'm making the GF batch.
* All surfaces, sinks, utensils and bowls used are washed with kitchen spray, dish soap, and multi quat sanitizer, using a brand new J cloth, sponge, and paper towel to dry.
* All ingredients and containers are kept on a separate surface to the space I am weighing and mixing my ingredients. (No measuring tools to worry about cross contamination as I simply pour everything into a bowl on a scale. GLUTEN Flour has its own separate scoop.)
* They are placed on clean trays, and then saran wrapped 2x and placed into my chest freezer - since everything else ALSO goes in this freezer, I try my hardest to make sure the trays don't come into contact with anything contaminated with gluten. All gluten cookies are kept in labeled plastic tubs and bags to prevent cross contamination. Gluten Free cookies are not stored in the freezer for any longer than it takes to freeze the dough before baking.
* They are baked in my convection oven, on a clean tray with parchment paper. I have unfortunately no good solution here for the convection oven not being separate and I worry about contamination here. I'm not sure if that's silly/overboard lol.
* They are placed on thoroughly cleaned cookie racks to cool and then placed in sealed kraft paper boxes with grease paper and labeled GLUTEN FREE.
* GF cookies will be kept in a separate, marked bin from regular gluten cookies for transport to the market.
Would love to hear your input. I'm thinking for next time I will be purchasing a separate bowl, utensils set, cutting board for work surface, and cookie rack kept in their own bin, as well even though I scale my ingredients and do not put anything into the ingredient bags other than the flour scoop, I worry about them being stored in the same cupboard as my gluten flour so I might purchase a separate set of those too.
