Do all freshwater fish have a different smell or is it my environment?

So after getting older and after a decade of saltwater fishing and moving near a private lake I started freshwater fishing. I stopped fishing altogether for a few years so I forget a lot about fishing and am basically a beginner again. I never noticed with saltwater but with freshwater gar, lmb, bluegill ect all have different smells.
