Ceiling wood covering (tongue and Groove?)

Hello all,

We've got a vaulted ceiling, 11 foot by 14 foot on each side, and we are wanting to cover it with wood paneling. Our GC hasn't been much help on design of things, so we were looking ourselves.

We were considering woodplank.com Hemlock and didn't realize this would be ~$11k of material. It seems like something like Pine would be $1k but my wife doesn't like pine wood or the rustic look of it (and generally doesn't think stain would fix that issue).

Is there an in between here? I found some Oak on Home Depot but that was also going to be about 7.5k.

Mostly looking for advice on options to look at and what to look for. I'm ok paying the 7.5k if that's the only realistic option above pine but I would love to be in the 3k-5k range
