How big do you have to go...

We are on our fifth season with our first camper which is a 17ft hybrid. We love having two queen beds with allowing the dinette to be permanently up. But the temperature control in the bunk ends in early and late season is starting to wear on us. Any small bunk house options that dont require the big bed to be converted to a dinette? Probably limited to 7000k pounds with current tow vehicle.
