Brick Countertops Help

Hello! I am helping restore an old home and the kitchen has brick countertops. We have cleaned the countertops as best we could but they still dont feel food safe. Someone suggested a sealant. Does anyone have any thoughts on the best way to seal brick and keep it food safe?
