Can a manager see previous information after it has changed?

As the title suggests, would a manager be able to see what information used to be in a field before a change, such as a mobile phone number, emergency contact information, etc? Or would it only display the most up-to-date information? I ask as I have recently left a prior job with a manager who I do not see eye-to-eye with, and who has made prior comments about contacting emergency contacts. I have now left, but I do not want them able to contact anybody without my permission, which I know would lead to bigger issues for them, but I still worry.
