Anniversary Island Help?

My husband and I are planning a trip for our 20th anniversary and I think we've settled on Greece. We are living in Ireland (originally from US) so would love a nice warm beach.

A lot of my trips end up bouncing us from place to place to see as much as possible, so hubs has requested a relaxing, one stop vacation.

I'm having issues choosing and island to make home base please help! Here's what we're looking for:

• quiet/less crowded (no thanks mykonos etc)
• nice beaches
• great food options
• nature activities/hiking excursions
• historical.sites
• don't mind renting a car/driving
• we don't have kids, so definitely not looking for a family resort type situation

Friends have recommended Crete and Rhodes, Corfu and Naxos. Is there a particular resort/area you liked? We're not budget travelers so don't mind spending a bit extra to be comfortable.
