Building a desktop - GPU, CPU advice?

This question is asked fairly regularly but the tech advances so quickly I wanted an update from you all:

I live in Amsterdam but am visiting the States and am looking to pick up a GPU and CPU here before returning to build out the rest of my computer at home. I am new to AI image and video generation but it's been a looong time since I upgraded my setup so I'm ready drop some coin. Any insights would be helpful! Currently looking at the 5070 Ti but open to any and all other suggestions.
