If I want to do a mono normal type run in Kanto what's the best game for it?

I'm trying to branch my Pokémon playthroughs a bit, and I'm not sure if I want to do them an nuzlockes necessarily but gathering some info anyway.

So I've been playing around with the idea of a monolocke but limiting those choices to types who don't have a prominent specialist. The idea came to mind because it occurred to me that technically a full run of Jhoto and Paldea lack only 1 type specialist. And I had considered Red and Blue for Kanto as Chansey is actually usable. But after.... I don't know at least 20 hours in the Safari zone I gave up because Tauros, Chansey and Kangaskhan were all proving to be massive headaches. I heard the safari zone is more bearable is all versions besides the original and I didn't really enjoy my time with Let's Go.
