New ceiling with existing wall-how to tape

What’s the best practice for installing new ceiling drywall up against existing wall. I plan to skim the existing wall and apply new drywall to the ceiling. My question is how to tape. I assume I need to rip out old tape and not tape on top of old tape right? How do the pros deal with this?
