Rising sophomore wondering about grad date

I’m a rising soph with ~55 credits which is junior standing at my uni. I could feasibly graduate by 2027 if i put in some work, but I don’t actually plan to do that. But I do see a lot of roles that are restricted to junior only. Should i just put 2027 on my resume and let them know my plans changed if asked?
