Trying to grow Pasture Thistle

Long story short, its my fiancé's favorite plant and she wants to have some at our wedding. Our wedding is in May. I've found a place that sells potted thistle in September and seeds.

Does anyone have any experience growing this plant? Would it even be possible to have a flower of it in may?
