In need of a Denver green chile recipe

Hi all! Denver native here, currently living abroad. My grandfather is a 5th gen Denverite, and has a notorious green chile recipe that he stole from a restaurant owner during a night of drinking back in the 70s. It’s become a point of contention in my family, with all his kids trying to recreate the recipe but failing. He’s refused to give it to anyone while he’s still alive. It’s genuinely the best green chile I’ve ever had. Anyways, I’m trying to reverse engineer this recipe myself, and was wondering if anyone had either 1) a really solid base recipe for Denver green chile that I could modify or 2) any idea what North Denver restaurant has the best green chile and has been around since the 70’s 🤣. Any help or advice is appreciated!
